Combine flour, salt, sugar, yeast, cinnamon and lemon rind. Mix in eggs, milk and melted butter and make a smooth dough.
Leave dough to rest in a cool place for 2 hours. Roll out dough so that it is 7 mm thick. Cut out rounds 7 cm in diameter. Deep fry for about 5 - 6 minutes at 190°C or until well browned.
Drain and sprinkle with icing sugar. Serve.
